Accomac Events’ Executive Chef, Ed Dodds, shares his recipe for the Grapefruit Guacamole served at the Grand Opening of the Maryland Zoo’s Mansion House.


Grapefruit Guacamole
2 each ripe avocado
1 ruby red grapefruit
1 tablespoon red onion
1 tablespoon red pepper
1 teaspoon cilantro
salt and pepper to taste

Use the zest, juice and segment the grapefruit, smash meat from avocado with grapefruit, this will prevent browning of avocado. Add fine diced red onion, fine diced red pepper, cilantro and salt and pepper to taste. Serve right away or cover with plastic wrap and store with tight lid to prevent additional browning. We use a thin slice of watermelon radish as garnish and serve on a fried lavosh crisp.
