The small plate concept is still going strong as an alternative to a standard buffet, stations, and heavy (yes, even butlered) hors d’oeuvre receptions. It is a fun option to consider for your wedding! So many of us are trying to watch our portions but if you’re like me, you love food and you don’t want to be stuck with one large serving of anything. A petite meatloaf “muffin” served on a small plate with a mini scalloped potato timbale enhanced with a brush stroke of ketchup on the plate for color is perfect for a station. The best part is it won’t break the bank, but looks like great to your guests. If you want to do this as a stand up item, serve the meatloaf in a meatball fashion and stuff it with mashed potatoes. This way, no utensils are needed, just a bite sized bamboo skewer will do.
Another station could be chic biodegradable cups of lemon risotto topped with one Chopped grilled shrimp garnished with a confetti of colorful edible flowers. The same would go for an Asian rice with hoisin glazed salmon in a mini Chinese take out box, rather than the large standard size. Both of these options work well with mini biodegradable forks, especially in a stand up, butlered environment.
Edible spoons filled with chopped salad, crumbled sausage, and pumpkin seeds laced with walnut vinaigrette work just as well as our mini BLT salads in edible spoons. Another option is an edible soup spoon! We just served this at a recent event:

For the bultered items, they are served in courses just like dinner service. As an example, we’d start with a nice soup sipper in votive cups, move on to the edible spoon salad, and proceed to main course items and finish things off with bite sized desserts.
