Spicy Pumpkin Soup:

Yield: 30 portions

Ingredients:
3 small onions, diced
12 stalks celery, diced
12 ripe plum tomatoes, seeded and diced
5 Tbsp butter
5 1-lb cans of processed pumpkin (of course, fresh is preferable)
5 qts chicken stock
4 Tbsp cumin
2 Tbsp ground coriander
1 tsp ground cardamom
2 tsp cayenne pepper
3 cups unsweetened coconut milk (not low-fat)
Approx. 20 fresh curry leaves
salt and pepper to taste

Method
:
Saute onion, celery and tomatoes in butter until onions are transparent. Add spices and cook for one more minute. Add pumpkin and whip in chicken stock.
Simmer for 30 minutes, add salt and pepper. Serve hot with cumin-roasted pumpkin seeds.
